not your average rice & beans
(spicy northern beans, kale, & onions over rice)
1 bag Tuscan Kale
1 can Northern Beans, rinsed
1 cup cooked Basmati Rice
1 Sweet Onion, chopped
1 tbsp Avocado Oil
1 tbsp Turmeric
1 tbsp Paprika
1 dash of Cayenne, to taste
Sea Salt and Pepper, to taste
sauté onions in avocado oil for 5 minutes. add in beans, bag of kale, & spices. simmer until kale is wilted. serve on bed of rice.
*you can get everything you need at Trader Joe’s. I buy organic when possible! substitute with white bean & use frozen green of choice if easier.
